add QMK DFU make option to gherkin, and bootloader replacement instructions (#3253)
* add QMK DFU make option, bootloader replacement instructions in wanleg readme: update flashing instructions, add bootloader replacement instructions (replace default Caterina with QMK DFU). add make option for QMK DFU * suggested revisions made * formatting changes
